The meat is a little bit chewier than commercial chicken (they are, after all, twice as old), but the flavor is wonderful - very much like turkey. Chicken is about the only meat I eat on a regular basis so I have nothing bad to say as long as you treat them right, which it seems you do. I hope they're tasty.
